The array of creative dishes from Rui Paula focuses on the use of genuine products of traditional Portuguese cuisine, using modern techniques and concepts. Rui Paula is constantly seeking new nuances that enhance the products scents, flavors and textures.
His cuisine is bound to feelings and old memories. Awakens the senses and stimulates the pleasure of eating. It is a Douro-Trás-os-Montes inspired cuisine that gives a very personal and contemporary slant.
Always favoring the use of DOC and DOP products, Rui Paula reinvents the way of preparing and presenting the ‘Milhos’, Lamb, the Bísaro Porc and the Maronesa or Barrosã Calf. In it’s season, game dishes are also part of his proposals, along with chestnuts, sausages and wild mushrooms.
On the menu there is also room for cod and octopus and other seafood. Rui Paula works the fish surprisingly, combining it with risottos, ‘açordas’ and vegetables, with the products preserving their original flavor. The selection of olive oil and organic herbs, the bread and wine quality complement the excellence of his proposals. The Olive Oil Menu and the Signature Menu are other alternatives that Rui Paula presents in the DOC restaurant, giving visitors an unforgettable sensory experience.
Since it’s first day DOC assumed itself as a wine restaurant, functioning as a kind of tasting room of the Douro wines. The wine menu contains all the great wines that are produced in the Douro, from the mythical “Barca Velha” to the the most exclusive and rare OPorto wine. With 645 references, is the most complete repository of the best that is produced in the region, a true showcase of the Douro wines. But we could not leave out the great wines of the world, such as Champagne, nor ignore the neighboring regions of Douro, as Dão or White Vinho, whose boundaries intersect in geography and common memories and traditions.
