Rui Paula Recife gastronomic line establishes a bridge between Portugal and Brazil, more exactly between the northern kitchens of the two countries, which are based on tradition, memory, and quality of products and also inherited the virtues generated by the scarcity and the need. Culinary inspirations of Portuguese origin, such as cod with bread, crispy suckling pig and the goatling are in dialogue with dishes linked to the Brazilian geography and identity, as are the seafood “pirão”, the quail, the jerky and the mashed parsnip.
The wine is an essential element in Rui Paula. The restaurant has varied menu, with proposals of old and new world wine. All major wine regions of the world are represented in the wine cellar (fully air-conditioned), including Portugal and, in particular, the Douro region where João Carlos Paes Mendonça has the Maria Izabel farm. The wine list consists of over 300 references and contains many proposals to serve wine by the glass at the bar and harmonize with tasting menus.
